Method

Step 1

Cut the Gorgonzola into cubes and place in a ceramic or steel bowl. Melt it in a bain-marie (placing the bowl in a pot of boiling water). Whisk until melted, then add the cream and Parmigiano Reggiano. Stir for 3 minutes.

Step 2

Meanwhile, cook the pasta in abundant salted water. Drain it once cooked.

Step 3

Dress with the Gorgonzola sauce and serve immediately. Garnish with a sprig of fresh oregano or thyme.
